Royal Culinary Academy at Sea and the American Culinary Federation
We are proud to announce that Royal Caribbean’s Royal Culinary Academy at Sea and the American Culinary Federation (ACF) have joined together to establish a new multi-tiered culinary training program to be offered to Royal Caribbean’s onboard culinary team members in the positions of:
1. Sous Chef,
2. Chef de Partie, Demi Chef de Partie,
3. Cook Assistant (Commis), ***
4. Cook Trainee, and Culinary Utility.
The ACF has been a longtime advocate for quality culinary education for cooks and chefs. Its very mission is based on the education, training, and certification of professional cooks and chefs. The ACF and its mission have stood the test of time since their inception in 1929. Through this program we hope to shape the futures of our cooks and chefs and garner for them the professional recognition they deserve for their hard work and dedication.
The use of the ACF certified study materials will result in a worldwide recognized certification, offering RCL the ability to tap into our onboard talents for filling future vacancies in the galley, while appealing to our new applicants with an offer to take a job and turn it into a career.
The American Culinary Federation
ACF operates the only comprehensive certification program for chefs in the United States and currently certifies more than 10, 000 professionals worldwide. Candidates for ACF certification must have a high level of work and educational experience and pass both the written and practical examination. In addition, candidates must complete coursework in food, safety, nutrition and supervisory management.
